As you may already know, Dragon Ball Kai is the 20th anniversary re-cut of Dragon Ball Z. Notably, the audio has been completely redone in stereo with a brand new soundtrack. All of the lines have been re-recorded by the (mostly) original cast. The video has been remastered to include richer colors, ormatted/cropped to fit in wide screen format, and even in some cases, re-animated completely (notable during major ki blasts and such).
Of course, on top of all of this, Kai is boasting a much faster pace than its now 20 year-old predecessor by cutting out a majority of the filler, following the manga more closely. I'd definitely recommend giving this one a go, even if you're not a Dragon Ball Z fan. It's pretty interesting how different a series can be when the three-episode power ups have been removed.
